اثرات کاربرد قبل از برداشت اسید سالیسیلیک بر ویژگیهای کیفی و فعالیت ضداکسایشی در دو رقم زردآلو

چکیده

به­منظور ارزیابی اثرات کاربرد قبل از برداشت اسید سالیسیلیک بر خصوصیات کیفی و فعالیت ضداکسایشی میوه دو رقم زردآلو، یک آزمایش فاکتوریل بر پایه طرح بلوک­های کامل تصادفی با دورقم زردآلو در سه تکرار انجام شد. درختان زردآلو ارقام شکرپاره و شاملو شش روز قبل از برداشت با غلظت­های صفر، 1/5، 3 و 4/5 میلی­مولار اسید سالیسیلیک محلول­پاشی شدند. میوه­ها در هر دو رقم در مرحله رسیدگی فیزیولوژیکی مربوط به آن رقم برداشت و صفاتی نظیر سفتی بافت میوه، اسیدیته، درصد مواد جامد محلول، pH، مقدار اسید آسکوربیک، محتوای فنل کل، فلاونوئید کل و ظرفیت ضداکسایشی کل میوه­ها مورد ارزیابی قرار گرفتند. نتایج نشان داد که با افزایش غلظت اسید سالیسیلیک در هر دو رقم از مقدار مواد جامد محلول و pH کاسته شد ولی مقدار سفتی بافت میوه، اسیدیته قابل تیتراسیون، فنل و فلاونوئید کل افزایش قابل توجهی نشان دادند. اثر تیمارهای اسید سالیسیلیک بر مقدار اسید آسکوربیک و فعالیت ضداکسایشی کل معنی­دار نبود. در رقم شکرپاره بیشترین مقدار سفتی بافت میوه، اسیدیته قابل تیتراسیون و فنل کل در میوه­های تیمار شده با اسید سالیسیلیک 4/5 میلی­مولار و کمترین مقدار آنها در میوه­های شاهد ثبت گردید. در این رقم بیشترین مقدار فلاونوئید کل مربوط به تیمار 3 میلی­مولار بود. در رقم شاملو نیز بیشترین مقدار سفتی بافت میوه، اسیدیته قابل تیتراسیون و فلاونوئید کل مربوط به تیمار 3 میلی­مولار اسید سالیسیلیک بود.

Effects of Preharvest Application of Salicylic Acid on Qualitative Traits and Antioxidant Activity of Two Apricot Cultivars

In order to investigate the effects of pre-harvest salicylic acid (SA) treatments on fruit quality and antioxidant activity of two apricot cultivers (Shakarpareh and Shamlou), an experiment was conducted, based on complete randomized blocks design. Apricot trees were treated with four concentrations of salicylic acid (0, 1.5, 3 and 4.5 mM) 6 days before harvesting. Fruit were harvested on physiological ripening in both cultivars and some characteristics such as fruit firmness, total soluble solid (TSS) contents, titratable acidity (TA), ascorbic acid content, total phenolic contents and total anti-oxidant activity were determined in treated and non-treated fruit. Results showed that pH and TSS were decreased in chemical-treated fruit but TA, fruit firmness, total flavonoids and total phenol were increased significantly in both cultivars. Salicylic acid treatments had no significant effect on ascorbic acid content and antioxidant activity. The highest value of fruit firmness, TA, total phenol content in Shakarpareh were observed using 4.5 mM SA but the lowest value were found in non-treated fruit. The highest flavonoid contents in this cultivar were recorded in the 3 mM SA. In Shamlou cultivar, the highest value of fruit firmness, TA and total flavonoids were observed in 3 mM SA.
