تأثیر طول دوره انبارمانی و منطقه‌ی کاشت بر خصوصیات فیزیولوژیکی و بیوشیمیایی میوه سیب (Malus domestica Borkh.) رقم گرانی اسمیت

چکیده

بررسی و شناخت روند تغییرات شاخص‌های فیزیولوژیکی و بیوشیمیایی میوه در طول دوره نگه‌داری در انبار سرد، به‌خصوص در مناطق عمده تولید، منجر به مدیریت موفق و اقتصادی انبارمانی و عرضه میوه با کیفیت به بازار می‌شود. مطالعه حاضر، در سال 1393 به‌منظور مقایسه عمر انبارمانی میوه سیب رقم گرانی اسمیت تولید شده در دو منطقه مهم آبیک استان البرز و خرمدشت تاکستان استان قزوین با ارتفاع متفاوت از سطح دریا صورت گرفت. میوه‌ها در هر دو منطقه ۱۶۰ روز پس از مرحله تمام گل برداشت و در چهار مرحله شامل: قبل از انبار و 1، 2 و3 ماه پس از نگه‌داری در انبار سرد مورد ارزیابی واقع شدند. باتوجه به نتایج، تفاوت معنی‌داری بین دو منطقه در اکثر شاخص‌های کیفی موردبررسی وجود داشت. حداکثر سفتی بافت (04/9 کیلوگرم بر مترمربع) در میوه‌های انبار شده منطقه آبیک مشاهده شد. بیش‌ترین میزان فنل کل (22/5 میلی‌گرم در 1 گرم وزن‌تر) و فعالیت آنتی‌اکسیدانی پوست میوه (10/84 درصد) مربوط به منطقه آبیک قبل از انبار بود. حداکثر فعالیت آنزیم پراکسیداز (67/9 میکرومول در 1 گرم وزن‌تر در دقیقه) در منطقه خرمدشت و حداقل فعالیت این آنزیم (78/0 میکرومول در 1 گرم وزن‌تر در دقیقه) در منطقه آبیک مشاهده گردید. در نتیجه کشت سیب ’گرانی اسمیت‘ در مناطق دشت نزدیک به دامنه کوه، منجر به بهبود شاخص‌های کیفی میوه مانند سفتی، طعم و ارزش غذایی و به‌دنبال آن افزایش - انبارمانی شد.

چکیده [English]

Investigating and recognizing the trend of changes in physiological and biological characteristics of fruit during the period of cold storage leads to successful and economical storing management and supplying quality fruit to the market. The present study was conducted in 2014 in order to compare the storage life of ‘Granny Smith’ apple fruit produced in two important regions of Abyek-Alborz and Khorramdasht-Qazvin with different altitudes. Fruits were collected 160 days after full bloom. Fruits were sampled after each stages of including pre-storage, 1-month, 2-months and 3-months. According to the results, fruits grown in Abyek region were firmer (9.04 kg/m2) than those grown in Khorramdasht. The highest skin total phenol was observed in the fruits before storage (5.22 mg GAE/1 g FW) and three months of storage in Abyek region. The highest antioxidant capacity of skin (84.10 %) was observed in the fruits grown in Abyek before storage, respectively. The highest (9.67 mg GAE/1 g FW) and lowest (0.78 mg GAE/1 g FW) peroxidase activity was observed in Khorramdasht and Abyek, respectively. ‘Granny Smith’ apple cultivation in lowland areas close to the mountain range led to production of firmer fruits, lower peroxidase activity; and, thus better storability. The antioxidant capacity of fruit juice and its nutritional value was also higher in Abyek region.
